Wuyi Rock Tea or Yancha

From Tian Xin yan, Inner Zhengyan area, Wuyi Mountains, Fujian Province, China.

This Rougui from Tian Xin Yan garden, is a firm favourite of the tea family that produce it. Large tight and loose twisted leaf, greyish blue and touches of tan in tone. The dry leaf gives a pleasant roasted aroma with cocoa and fruit high notes. the wet leaf then offers a sweet rounded aroma. The tea soup is a deep orange colour, thick smooth high quality that gives a smooth and mellow tea to taste that is sweet and delicate with a subtlety of cinnamon and a fruitiness that leaves a rich and deep long lasting flavour with tones of its unique rock terroir.
Harvested in Spring '19 by the Chen Family. The leaves have then undergone a medium bake, 3 times charcoal fire roast, following traditional techniques, carefully and skilfully processed over June/July '19 in Wuyishan.
Brew Guide Per Cup:
Tea 1 teaspoon (3g)
Water 80-85*c // 300ml
Time 2-3 minutes
Reinfuse leaves x 3 to personal taste.
Brew Guide - Gong Fu Style:
Water per 100ml
At 90*c for the rinse & 1st infusion,
85*c for the following 3 infusions,
80*c when the leaves have fully opened up.
Time 20 seconds + recommended but adjust to personal taste.
