This Shoumei has been highly crafted and benefited from good storage, it is now at a great age for a very enjoyable cup. The taste is very clean and pure with a mellowed sweetness. Additions to the tasting notes would add an obvious Jujube flavour similar to apple or dates.
A Spring Harvest, plucked and processed with great care by the Chen Family in 2011, left to mature then Pressed in 2014. Stored in Wuyishan.This is a Shoumei grade the 4th highest grade of white teas. Consisting of two leaves and one bud. And at this age, a personal favourite of the grower coming highly reccomended.
Traditional sun drying techniques have been used to retain the freshness of the spring leaves, due to the natural oxidisation, this results in high levels of antioxidants remaining in the leaves whilst being low in caffeine levels, similar to that of some green teas.
Brew Guide For Gong Fu Brewing
Water/Temp 100ml / 90-100*c
Brew time 20 seconds +
Reinfuse leaves 4 - 6 times, 90*c for the 1st 3 infusions,
100*c or later infusions increasing brew time.
Like with many White teas the flavours within the leaves become more pronounced as the water temperature cools.
